Protein Pancakes

Happy Easter!!  

The perfect day for a picnic full of flowers, waffle cone hats and PROTEIN PANCAKES!!

You don't have to eat bouquets of nectarous flowers for the same sweet taste you get from spoonfuls of refined sugar. 

These sugar-free pancakes I made are quite healthy, with the same refined sugar taste.

1/2 cup almond milk
1 sweet potato, chopped
1/4 cup oats
1/4 cup almond meal
3 egg whites
1 banana
1 tablespoon of almond butter
1/4 cup protein powder
1/4 cup honey
2 tablespoon of hemp seeds
1/2 teaspoon vanilla
1 teaspoon cinnamon
1 tablespoon coconut oil

Place rolled oats in a blender and grin into a flour
Put sweet potato into a small pot, cover and boil.
Reduce heat to medium-low, takes about 20 mins.

Blend sweet potato, eggs, honey, banana, cinnamon, vanilla extract, hemp seeds, almond meal, butter and milk in a blender until smooth.
Pour batter into a large bowl. Stir in the protein powder and ground oats.

Heat coconut oil in a skillet and unload the batter!
Drizzle on the maple syrup and enjoy the "Best pancakes EVER!" (according to Mya).

I'm no longer a slug!!

Goodbye by dear friends of cheese cake and pie, 
I will deeply miss you, I can not lie~

I have decided to cut refined sugar from my life.
Now this doesn't mean I won't eat sweet treats... just NO sugar. 
I'm working on a recipe right now- It tastes much better, and I don't feel like a slug after eating it! 
Fosselman's Ice cream I'll miss you the most,
you are the best Ice cream on the West Coast

With Easter being right along the bend, my Little and I made some egg-head friends

~Crack off the tops of eggs (drain, rinse and allow them to dry)
~pour the egg whites into a bowl and stick in the fridge for a morning scramble
~fill the eggs with soil and plants of any sort (rose, wheat, clover and micro greens were used above)
~draw a face and accessorize
~put into an egg holder
...and Wallah!
This is such a fun, fast and easy way to decorate eggs without using artificial toxic dyes.

I just know that Easter Bunny is around here somewhere...

Potted Carrots:
~ Wash the terra cotta pots and line with muffin liners
~ Poke carrots with toothpick, insert parsley
~ Fill pots with hummus as your soil

Egg Planter:
~ Crack off top of egg, drain, rinse and allow to dry
~ Glue egg to terra cotta saucer with glue gun
~ Surround egg with greenery
~ Fill egg with soil & flower

A nice Easter centerpiece, and a fun and healthy treat!
